Khoushkaar dessert (pronounced Rashtè Khoushkaar in Gilaki) is a traditional dessert and sweet of the Gilanis.The most time of using this sweet is during Ramadan and it is also known as a special sweet for Ramadan. In the beautiful province of Gilan and especially the city of Rasht, this sweet is prepared for Iftar.In other words, all the fans of this sweet know it as Rasht khoushkar. In Tehran and some other provinces, this sweet is prepared in special centers, especially during Ramadan.
The main ingredients of Khoshkar: rice flour, walnut kernels, sugar, cardamom and cinnamon. The dryer is prepared on a tray made of high purity copper.Of course, this tray must be hot. After the initial purchase or cooking, the customer should fry it at home with a little butter or oil, and then fry the noodles in a syrup made from water, sugar, cinnamon and cardamom (which is a syrup similar to zucchini syrup and Okra) and after absorbing the sweetness and sweetening, according to your temperament, this traditional and attractive sweet is ready to eat.
The noodle consists of rice flour, which is prepared with special tools and a hot copper tray and a special comb, which is made of rice and is known as a funnel or comb for grinding. The dried fruit also has internal contents that are placed inside the abdomen during preparation.

Raw material:
Rice flour: 2 cups
Water: 4 cups
String comb (metal or plastic comb): 1 pc
Liquid oil
Cinnamon: 1 tablespoon jam
Sugar: 1 and a half cups
Chopped walnut kernels: 100 g
Grinded cardamom: as needed
Syrup: A combination of water, sugar, cinnamon and saffron
First, mix the rice flour well with water to get a liquid with the right concentration for dry noodles.
Now pour some of the noodle liquid in the dry comb and at this stage we place our large copper pan or tray on the stove flame.
Give it some time and let it heat up on medium heat. Before pouring the material on the tray with a brush-like tool or a clean cloth, grease the bottom of the tray very lightly.
Bring the special dry comb to the tray and move it all at once, quickly up and down, and after covering the tray, move it to the sides so that the lines become a lace-like fabric.
Now wait and after about 10 seconds, remove it and quickly fold the corners of the fine string. Fold one side of the Khoshkar dessert into a rectangle and at this stage pour the dry ingredients (which is a combination of sugar, cinnamon and walnut kernels, etc.) on it and bring the other side on the ingredients to form a rectangle with a full belly.
Fry the dried noodles prepared from the first step in a pan with red liquid oil according to your mood. Then, soak in the pre-prepared syrup. Now you can put it in a bowl, decorate it and place it on the table.
